Recipe: Calarmari Rings

Goes well with a lazy Sunday brunch and beer

10 pc calamari rings
1 cup flour
¼ tsp black pepper
1/8 tsp chili flakes
½ tsp garlic
1/4 cup beer batter
Olive oil
Prepare the beer batter. In a deep bowl, mix a cup of the flour, olive oil, 1 1/2 teaspoons salt, red pepper and black pepper to taste. Slowly add beer, stirring gently until batter is smooth. Cover and refrigerate for 30 minutes. In  a saucepan, heat 2 inches vegetable oil to 375°F. In a shallow bowl, place the remaining cup of flour. Dip squid rings in flour, shaking off excess. Coat with beer batter. Fry squid in batches in hot oil until deep golden brown for two minutes. Drain on paper towels. Serve calamari hot with cajun tartar and marinara sauce.
